The Ultimate Festive Pancake Traybake

I don’t know about you but my Christmas mornings with the 3 kiddies are Crazy with a capital C! With all of the excitement and magic, the very last thing I want to be doing is faffing around making us all breakfast in the mornings, but at the same time, I do want us to have something that’s somewhat of a festive treat. That’s where this healthy festive pancake traybake comes in and saves the day! It can be prepped the night before in less than 5 minutes, because it’s as easy as simply throwing all of the ingredients into the blender and whizzing away!
It is utterly delicious and yet deceptively healthy. It gets its gorgeous green hue from some spinach but I promise you, it doesn’t taste even a teeny bit vegetable-y in the slightest! It also contains some fibre-rich whole grain flour, some bananas for sweetness, incredibly nutritious hemp seeds and just a handful of other easy-to-find ingredients.
This breakfast is all about the toppings - here I used some utterly irresistible cranberry curd, some white chocolate chunks and a handful of frozen berries. But feel free to mix it up depending on whatever tickles your fancy! A swirl of nut butter, some sliced banana and milk chocolate chips was my middle son’s suggestion; whereas my daughter was hoping for a cheesecake-type swirl in her next batch. Both are excellent suggestions!
One portion (without the toppings) provides 211 calories, 8g of protein and 5g of fibre. But most interestingly it provides a massive 93% of my daily vitamin A requirements and 28% of my calcium…and that’s all before I’ve even gotten out of my pyjamas! So it really kicks the day off with a bang, and I’m happy knowing that I’ve managed to sneak some goodness in before we all eat our body weight in candy canes and Terry’s chocolate oranges!
HEALTHY INGREDIENTS
2 Bananas
80g Fresh Spinach leaves
1 Egg
25g Hemp Seeds
140g Fine Plain Wholemeal Flour
20g Sugar of your choice (I used Palmyra Blossom Nectar)
150g Buttermilk
1/2 tsp Baking Soda
TOPPING SUGGESTION:
Nut Butter
Chocolate Chips
Berries (frozen or fresh)
Sliced Banana
Flaked Almonds
EASY METHOD
Preheat oven to 180 degrees.
Line a baking tray with parchment paper and give it a quick spray of oil to stop the mixture from sticking. Note: the baking tray should be approximately 10x8 inches.
Add all of the ingredients into a high-speed blender and blitz until the mixture is smooth.
Pour the green mixture onto the parchment-lined baking tray and add your toppings.
Bake in the oven for approximately 18 minutes, or until a skewer comes out clean.
Serve immediately and enjoy!
