Taco Tuesday….done the superfood way!
Serves 4
Great for entertaining or for a fresh (preferably alfresco) summery meal. Packing in a mighty 5 of your five-a-day with smokey salsa, spirulina guacamole, caramelized onions, and fresh cucumber and lettuce. It provides a hefty 32g of protein from the Omega 3 and zinc-rich prawns, and a massive 41% of my daily fibre intake, not to mention blood-sugar stabilizing complex carbs from wholewheat seeded tortillas. And to top it off, it provides 40% of my Vitamin C requirements. I just love a meal that I can make in advance and keep in the fridge for later when I’m too ‘hangry’ to think straight! Plus it means there is minimal washing up for a dinner party too.
It is dairy free, sugar free and can easily be made vegan by simply swapping the prawns for tofu, and can be made gluten-free by choosing gluten free tortillas. When I make this for the kids, I just leave out all the chillis so it is not spicy, and they love being able to assemble their own meal.
Prawns are an excellent source of Omega 3 fatty acids, high-quality protein and several important vitamins and minerals, particularly energy-producing B vitamins, iron, zinc and selenium to promote a healthy immune system. Although the cholesterol content of prawns is high, unless you have a pre-existing heart condition or already high cholesterol levels, it does not mean you should avoid this otherwise nutritious food. To make sure that when you include prawns in your meal, just limit the amount of cholesterol you eat for the rest of that day.
INGREDIENTS
For the Salsa
· 200g Cherry Tomatoes
· 75g Sundried Tomatoes
· Handful of fresh Basil or Coriander
· 1 tsp Smoked Paprika
· 1 tsp Fresh Chilli or dried Chilli Flakes (I like Chipotle chilli to add to the smokey taste)
· A few slices of Raw Onion
· Himalayan Salt & Fresh Pepper to taste
For the Guacamole
· 1 Avocado
· Juice and zest from 1 Lime
· 1 tsp Spirulina
· Himalayan Salt & fresh pepper to taste
· Handful of fresh Basil or Coriander
For the rest
· 4 Little Gem Lettuce Hearts — shredded
· 2 Sweet Onions
· 1 tsp Fresh Red Chilli (optional)
· 100g Cucumbers (shredded red or white cabbage also works very well here)
· Juice from 1 Lemon
· 2 Cloves Garlic
· Optional: 1 tsp Turmeric Powder
· 2 tsp Rapeseed Oil
· 8 wrap Wholewheat Tortillas
· 500g Jumbo King Prawns (substitute with Tofu if vegan)
METHOD
· Shred the lettuce and thinly slice the cucumbers.
· Peel and mince the garlic.
· Put all of the salsa ingredients in a high-speed blender and blitz to desired consistency.
· Repeat this step for the guacamole too (or mash with a fork for a chunkier consistency).
· Slice the onions and sauté them in a little oil over a medium heat.
· Heat the remainder of the oil in a frying pan and add the prawns, chilli, garlic and turmeric powder (if using). After 2 minutes, add the lemon juice and continue to fry for another 5 minutes or until fully cooked through.
· Optional — heat the tortillas for 20 seconds in the microwave.
· Assemble the taco as desired and enjoy!
