Strawberry & Mint Chia Cooler

Looking for a refreshing summer drink that is bursting with goodness? Then look no further! This Strawberry & Mint Chia Cooler is whizzed up in seconds and contains only strawberries, mint, chia seeds and water. One serving provides 43 calories, 2g of protein and amazingly 4g of fibre. I am always looking for new ways to help with my daughter’s constipation, so adding more liquids and fibre is usually a bit of a constant battle….but not with this! She begs me for more, and here’s a little grown-up-only tip: adding vodka to make it a cocktail is really quite special too! It’s a healthy alternative to sugar-laden fruit juices, with the added bonus of the protein and fibre content; not to mention all of the micronutrients from the Chia Seeds themselves. INGREDIENTS

· 180g Strawberries
· 2 tbsp Chia Seeds
· Handful of fresh Mint
· 400ml Water

METHOD

· Place the washed strawberries, mint and water in a high-speed blender and blitz.
· Stir in the chia seeds and serve over ice.
· Enjoy!
