Herby Avocado & Butter Bean Dip

A plant-based snack that can provide 1/5th of your daily Vitamin C and Iron requirements? Not to mention over a half of your Vitamin A and is super quick to make? I’ll take it! This is as bursting with flavour as it is goodness; and works equally well as a dip as it does spread on toast for breakfast. Add a rainbow of crudite and some wholegrain seeded crackers to seriously up your fibre game!

INGREDIENTS

· 50g Butter Beans (drained)
· 1 tbsp Light Tahini
· 1 tbsp Dill
· 1 tbsp Chives
· 1 tbsp Olive Oil
· ½ Avocado
· Juice and zest from ½ Lemon
· Juice & zest from ½ Lime
· 1 tsp Spirulina
· Himalayan Salt & Pepper to taste

METHOD

Put all of the ingredients into a high speed blender and blitz until desired consistency.
